New data files are created by selecting New from the File menu, or the File New toolbar icon

Layouts are like templates for the Data Editor; they are used to create multiple files with the same column structure (such as to monitor the same characteristics from multiple processes). They really aren't necessary to analyze a single process, since data can be entered into one of the standard layouts provided, and columns created or edited as needed.
Because of the general difference in structure between Attributes and Variables data, their data files are created separately. Once files are created, use the Change Data Type option in the Data menu to switch between the two types.
